melt-in-your mouth herbed shortbread



• 1 cup all purpose flour
• ½ cup unsalted butter
• ½ cup chedar cheese, shredded
• 1 tsp dried herbs (as your choice), I used Italian seasonings, basil and thyme
• ¼ tsp garlic powder
• ¼ tsp salt
• ½ tsp coarse ground black pepper
• Zest of ½ lemon (optional)
Heat oven to 180 0 C
Combine all dry ingredients, mix thoroughly
Beat butter until soft, add the dry ingredients , mix until soft dough forms.
Roll the batter into floured surface, about 1 cm thickness.
Cut into desired shape and sizes.
Put into ungreased baking pan
Bake for about 20 minutes until golden brown
Cool into cooling rack

Hint :
add lemon zest sure give it a tang.
You can also use fresh finely chopped herbs, but I am suggesting not to use fresh rosemary as it is too strong ( or use just a little bit, as the flavor mix well with the zest)
Also you can use a different kind of cheese, but carefully about the measurements of the salt, as a parmesan or other hard cheese is saltier than semi-soft cheese.
